How to prepare a
Belhaven Lobster

Craig from Belhaven Lobster demonstrates how to quickly and humanely prepare your lobster before showing just how simple removing the shell can be.
1. Use a sharp kitchen knife and aim to pierce where the horizontal and vertical lines intersect before pressing down firmly on the base of the handle.
2. Boil your lobster for roughly 10 minutes depending on size. More time should be given when cooking larger lobsters.
3. After cooking allow time to cool before separating the tail from the body. This can be done either by hand or with scissors.
4. Cut along the back of the tail then the front before pulling apart and removing the black intestinal thread and any coral coloured roe.
5. The meat will then easily peel away from the shells which can be saved and used to make a rich stock for a further recipe.
